
| Activity Ideas: Fettuccine Alfredo Materials: 1 pkg. Fettuccine noodles, 500 ml whipping cream, 1 cup butter, 1 cup Parmesan cheese, 2 tbsp. Parsley Directions: Cook noodles and drain. Melt butter in a pot. Add whipping cream, cheese, and parsley. Toss with the noodles. Let stand for five minutes so sauce can thicken. CINNAMON LETTERS Materials: 1 pkg frozen bread dough rolls (whole wheat or white), 2 teaspoons flour, non-stick cooking spray, 1 egg, 2 teaspoons water, 1/2 cup sugar, 2 teaspoons cinnamon Also: baking sheet, 2 mixing bowls, whisk, spatula pastry brush, oven mitt, oven set to 400F Directions: Let dough thaw on work surface. Spray baking sheet with cooking spray. Sprinkle 2 teaspoons flour on work surface. Roll each dough ball into a rope about 18 inches long. Cut the ropes into 3 shorter ropes about 5-6 inches long. Place the shortened ropes on the backing sheet. Form letters with the ropes created with dough. Place the baking sheet in a slightly warm place for 30 minutes to let rise. While waiting, crack the egg, and separate. Save the yolk for another recipe. Add water to the egg white and whisk until mixed. When the dough has risen, brush the egg white mixture on each letter for a shine. In another bowl, combine sugar and cinnamon. Sprinkle the cinnamon sugar on the letters. Bake in 400F over for 15-20 minutes, till golden. Remove, and cool. Remove letters with a spatula. Arrange letters on a serving plate or tray to spell words or to enjoy in different ways you think of. Eat and enjoy while warm. Cereal Balls Materials: ½ cup peanut butter, 1/3 cup honey, ½ cup flaked coconut, 2 cups favorite cereal, raisins, dates, banana chips, large bowls. Directions: Put ingredients (except cereal) in large bowl and mix well. Stir in ½ cup of cereal and put rest of cereal in another bowl. Scoop out spoonfuls of mixture and shape into balls. Roll bowls in extra cereal. Chill in refrigerator. Banana Split Cereal Materials: 1 small, ripe banana, 1/2 cup fresh blueberries or other fresh fruit, 1/2 cup nonfat or low-fat vanilla yogurt, 1/2 cup low-sugar cereal (such as Cheerios, Grape Nuts, or Bran Flakes) Directions: Peel the banana and slice it lengthwise (from tip to tip). Wash the blueberries by placing them in a colander and running water over them. (If you are using another fruit, wash it and cut it into small pieces.) Spoon the yogurt in a mound in the center of a cereal bowl. Sprinkle the cereal on top of the yogurt. Arrange the banana halves on either side of the yogurt. Sprinkle the top with the blueberries or other fruit. Yogurt Cheese Materials: 1 c. Plain or favorite yogurt, strainer, large paper coffee filter, bowl larger and deeper than the strainer, tablespoon, plastic wrap, serving plate Directions: Line the strainer with the coffee filter. Place the strainer on top of the bowl. There should be a space between the bottom of the bowl and the strainer. Spoon the yogurt into the coffee filter. Cover the top of the bowl with plastic wrap. Place it in the refrigerator for at least 3 hours or overnight. Remove the strainer from the bowl. Discard the liquid that has collected in the bowl. What remains in the coffee filter is yogurt cheese. To serve, tip the cheese onto a plate. Enjoy yogurt cheese the way you would cream cheese. Makes about 2/3 cup of cheese. Cheese Dip Materials: 1 12-ounce carton low-fat (1 percent) cottage cheese, 1/2 cup plain nonfat or low-fat yogurt, 1 1/2 teaspoons chopped fresh dill or 1/2 teaspoon dried dill, 1/2 teaspoon onion powder, 1/4 teaspoon garlic powder, 1/8 teaspoon black pepper Directions: Place all the ingredients in a blender or food processor. Blend until smooth, about 3 minutes. Pour the mixture into a medium bowl and cover with aluminum foil. Place in the refrigerator and chill before serving. Cereal Gorp Mix non sugar cereal with dry roasted nuts, and sunflower kernels with dried fruit, and finally add non sugar chocolate chips. |
